Throughout July, Mt Cook Lakeside Retreat invites guests to celebrate a Matariki refined dining experience inspired by the nine stars of the Matariki constellation. Each evening, our talented culinary team will present three stars on the chefs tasting menu, creating curated gourmet dishes that reflect the meanings, stories and seasonal themes of Matariki.

 

Interpreted through the chefs’ own creativity, local ingredients and regional flavour, each course offers a thoughtful expression of land, water, remembrance, harvest and hope.

WAITĪ | FRESHWATER

Waitī is connected to all freshwater bodies and the food sources found within them.

Mt Cook Salmon Mosaic Chamomile and red berry tea consommé, burnt leek ash tuile, lemon gel, sour avocado.

WAITĀ | SALTWATER

Waitā represents the ocean and the many types of food gathered from the sea.

Classic Seafood Chowder Mussels, clams, fish, and crayfish.

Market Fish Seasonal vegetable accompaniment and fresh King’s truffle from Canterbury.

TUPUĀNUKU | FOOD FROM THE SOIL

Tupuānuku is associated with everything harvested from the ground.

Carrot and Butternut Pumpkin Hummus Heirloom carrots, torched pumpkin, chickpea popcorn, carrot top dust, green oil, and pistachio dukkah.

Baked Ribbon Beetroot Mulled port wine.

Lemon Ricotta Potato Gnocchi Sous bois mushrooms and fresh truffle.

URURANGI | THE WINDS

Ururangi is connected to the winds of the sky and the vitality of the alpine environment.

Wild Alpine Venison Parsnip puree, organic garden vegetables of the moment, port jus.
