  • Amuse Bouche: Mountain River spiced venison tartar with strawberries, black pepper, and balsamic.
  • Bread Course: Butter Flake and Thyme Bread, served with New Zealand butter and Marlborough sea salt.
  • Entrée: Citrus-cured Mt Cook Alpine Salmon and Caviar with chilled tomato, lemongrass, lime, and ginger consommé, complemented by herb botanicals.
  • Main Course: Rangiora Turkey and Prosciutto Galantine with a blend of chicken, sage, and pancetta mousseline, crepinette, kumara, cranberry, and jus gras.
